disc brakes vs rim size

hi, i ordred wilwood disc brakes from speedway, i am ready to order my rims, i was reading in the catalogue about pad height, low, med, high. these brakes are going on the front of my T and the tires are gonna b the skinny ones. i will have the ford spindles, can anyone tell me if i will need the high pads or can i go with the low. i will also have the same ? for the back but the back rims will be 16" wide to handle the big M/T tires and i will need to know which pad height to go with, can any of you please tell me what you have done with this situation?
